  • 2 Zucchini, grated
  • 1 Carrot, grated
  • 1/2 Red Capsicum/Bell Pepper, diced
  • 1 Brown/Yellow Onion, diced
  • 2 Turkey Bacon Slices/Rashers, diced
  • 5 Eggs, lightly whisked
  • 1/4 cup Milk
  • 2 tablespoon Olive Oil
  • 1 cup Self-Raising Flour
  • 1 1/4 cup Grated Cheddar Cheese
  • Salt and Pepper to taste

Instructions

  1. Preheat the oven to 180C (350F) and line a square baking dish (9 x 9 in) with baking paper.
  2. Grate zucchini and carrot into a colander; sprinkle with salt and let sit for 10 minutes to draw out moisture.
  3. Heat olive oil in a frying pan over medium heat; add onion and turkey bacon, cooking until golden. Remove from heat to cool slightly.
  4. Squeeze excess moisture out of the zucchini and carrot. In a large mixing bowl, combine them with capsicum, onion, turkey bacon, cheese, and flour. Stir well.
  5. Add eggs, milk, remaining oil, salt, and pepper; mix until combined.
  6. Pour into the prepared baking dish and smooth the top; sprinkle reserved cheese on top.
  7. Bake for 35-40 minutes until firm to touch. Allow cooling before slicing.
