  • 2 ½ pounds of stew meat
  • 36 tablespoons olive oil
  • 4 cups beef stock
  • 5 medium carrots
  • 1 pound baby Yukon gold potatoes
  • 2 cups chopped yellow onions
  • 4 minced garlic cloves
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup flour
  • ½ teaspoon black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon celery salt
  • 1 cup apple vinegar
  • 2 beef bouillon cubes
  • 3 tablespoons tomato concentrate
  • 2 bay leaves
  • 1 rosemary sprig
  • 1 cup frozen peas
  • 1/4 cup cold water mixed with 3 tablespoons cornstarch (optional)

Instructions

  1. Season stew meat with black pepper, garlic salt, and celery salt; dust lightly with flour.
  2. Heat olive oil in a skillet over medium-high heat; brown the seasoned meat on all sides for about 5 minutes.
  3. In the same skillet, add chilled butter and sauté onions until soft; add garlic and cook for an additional minute.
  4. Transfer browned meat, onions, garlic, apple vinegar, beef stock, bouillon cubes, Worcestershire sauce, carrots, potatoes, bay leaves, rosemary sprig, and peas into the crockpot.
  5. Cook on low for about 210 minutes or until meat is tender.
  6. For a thicker stew consistency, mix cornstarch with cold water and stir it in during the last 30 minutes.
