Ingredients

  • 1/2 cup ditalini pasta
  • 8 oz sweet Italian turkey sausage
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 3 carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cups chicken broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 3/4 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper, to taste
  • 1 (15-ounce) can great northern beans, drained and rinsed
  • 1 (15-ounce) can dark red kidney beans, drained and rinsed

Instructions

  1. In a Dutch oven, spray cooking spray and heat over medium-high.
  2. Brown the turkey sausage for about 3-5 minutes; drain excess fat.
  3. Sauté garlic, onion, carrots, and celery until tender (3-4 minutes).
  4. Stir in chicken broth, crushed tomatoes, basil, oregano, thyme; season with salt and pepper.
  5. Bring to a boil; reduce heat and simmer covered for 10-15 minutes.
  6. Add pasta and beans; cook until heated through.
  7. Serve warm with optional parmesan cheese.
