- 1/2 cup ditalini pasta
- 8 oz sweet Italian turkey sausage
- 4 cloves garlic, minced
- 1 medium onion, diced
- 3 carrots, peeled and diced
- 2 stalks celery, diced
- 3 cups chicken broth
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 3/4 teaspoon dried thyme
- Kosher salt and freshly ground black pepper, to taste
- 1 (15-ounce) can great northern beans, drained and rinsed
- 1 (15-ounce) can dark red kidney beans, drained and rinsed
- In a Dutch oven, spray cooking spray and heat over medium-high.
- Brown the turkey sausage for about 3-5 minutes; drain excess fat.
- Sauté garlic, onion, carrots, and celery until tender (3-4 minutes).
- Stir in chicken broth, crushed tomatoes, basil, oregano, thyme; season with salt and pepper.
- Bring to a boil; reduce heat and simmer covered for 10-15 minutes.
- Add pasta and beans; cook until heated through.
- Serve warm with optional parmesan cheese.
