  • 1 cup chopped onion
  • 1 bell pepper (chopped small, any color)
  • 2 medium carrots (chopped into ¼-inch pieces)
  • 3 cloves garlic (minced)
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon salt
  • 15 ounce can diced tomatoes
  • 10 ounce can diced tomatoes with green chilies
  • 8 ounces elbow macaroni pasta
  • 15 ounce can black beans (rinsed and drained)
  • 15 ounce can red kidney beans (rinsed and drained)
  • 2 cups water
  • 2 cups shredded cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and carrots; cook until softened (about 6 minutes).
  2. Stir in minced garlic, chili powder, cumin, and salt; cook for 30 seconds.
  3. Add diced tomatoes, elbow macaroni, black beans, red kidney beans, and water; mix well.
  4. Bring to a simmer over medium-high heat; reduce to low and cover. Cook until pasta is tender (12–15 minutes), stirring occasionally.
  5. Remove from heat; stir in most of the cheese and sprinkle remaining cheese on top before serving.
