  • 1 1/2 cups brown lentils
  • 1 large white onion
  • 2 cloves garlic
  • 1 jalapeño
  • 2 cans Rotel fire-roasted tomatoes
  • Corn or flour tortillas
  • Lime juice

Instructions

  1. Cook brown lentils in vegetable broth until tender.
  2. In a pan, sauté diced onion, minced garlic, and jalapeño until fragrant.
  3. Combine the sautéed mixture with cooked lentils and add Rotel tomatoes.
  4. Lay out each tortilla, spoon filling into the center, and roll tightly.
  5. For air frying: Preheat to 375°F (190°C) and cook for about 10 minutes until crispy.
  6. For baking: Preheat to 400°F (200°C) and bake for around 15 minutes until golden.
