  • 1/4 cup oat flour
  • 1/4 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, oat flour, salt, maple syrup, coconut oil, and vanilla extract for the base layer. Press evenly into a greased 8×8 baking dish.
  3. Cook mixed berries with maple syrup and water over medium heat until softened. Mash and thicken with cornstarch before cooling.
  4. Prepare the crumble topping by mixing oat flour, oats, almond flour, salt, coconut oil, maple syrup, and vanilla extract until crumbly.
  5. Layer the berry mixture over the base and top with crumble before baking for 25 minutes until golden brown.
