  • 1/4 cup oat flour
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 1/2 cups almond flour, 1/4 cup oat flour, and 1/4 tsp salt. Mix in 1/3 cup melted coconut oil, 1/4 cup maple syrup, and 1 tsp vanilla extract until well combined.
  3. Press this mixture into a greased 8×8 baking dish to form the base layer.
  4. In a pot, combine 1 cup berries, 1 1/2 tbsp maple syrup, and 1 tbsp water. Heat gently and mash until smooth. Stir in 1/2 tsp cornstarch and simmer until thickened; chill in the fridge.
  5. For the crumble topping, mix together 1/2 cup oat flour, 1/4 cup oats, 2 tbsp almond flour, a pinch of salt, along with 1/4 cup melted coconut oil and 1 tbsp maple syrup.
  6. Spread the berry mixture over the base layer and top with crumble topping.
  7. Bake for about 25 minutes until golden brown. Allow cooling completely before cutting into squares.
