  • 3 cans cannellini beans
  • 1 yellow onion
  • 4 cloves garlic
  • 2 tablespoons olive oil
  • 2 large carrots
  • 1 stalk celery
  • 1/3 cup white apple vinegar
  • 2 cups chopped kale
  • 2.54 cups vegetable or chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon Italian seasoning
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion until slightly browned.
  2. Add minced garlic, diced celery, and chopped carrots; cook until softened (about 10 minutes).
  3. Stir in white apple vinegar and sauté until evaporated (around 5 minutes). Then add remaining ingredients except kale.
  4. Bring to a boil, cover, reduce heat to low, and simmer for 15 minutes.
  5. Discard bay leaves; blend about half the soup until smooth and return it to the pot.
  6. Stir in chopped kale and simmer until wilted; adjust seasoning as needed.
