  • 1 tablespoon butter
  • Salt and pepper, to taste
  • 1 pound boneless skinless chicken breasts
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 teaspoon Italian seasoning
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 12 cups baby spinach

Instructions

  1. Slice the chicken breasts in half lengthwise for even cooking.
  2. Season both sides of the chicken with salt and pepper.
  3. Heat olive oil and butter in a skillet over medium heat; cook the chicken until golden brown (165°F internal temperature), then remove from skillet.
  4. In the same skillet, sauté onion until translucent; add garlic, sun-dried tomatoes, and Italian seasoning.
  5. Whisk in chicken broth, then add heavy cream and Parmesan cheese. Simmer until thickened.
  6. Stir in baby spinach until wilted; return chicken to skillet, spooning sauce over it.
  7. Serve hot, garnished with parsley if desired.
