  • 2 medium sweet potatoes
  • 1 teaspoon olive oil
  • 1 1/4 teaspoons ground cumin (divided)
  • 1/4 + 1/8 teaspoon salt
  • 1/4 + 1/8 teaspoon ground pepper
  • 3/4 pound lean ground turkey
  • 4 garlic cloves (minced)
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 1/4 cup canned crushed tomatoes
  • 1/4 cup grated pepper Jack cheese
  • 2 tablespoons minced flat-leaf parsley

Instructions

  1. Pierce the sweet potatoes all over with a fork.
  2. Cook in the microwave on HIGH until tender when pierced with a fork, about 4 to 5 minutes per side. Let the potatoes rest until cool enough to handle.
  3. Cut the cooked sweet potatoes in half lengthwise. Carefully scoop the flesh out of each potato half into a medium-sized bowl, reserving the skins. Mash the potato flesh with a fork until smooth.
  4. Stir in olive oil, ½ teaspoon cumin, and season with salt and pepper. Divide the mashed mixture evenly back into the potato skins and place them on a baking sheet.
  5. Heat a large nonstick skillet over medium-high heat and lightly coat it with cooking spray. Add ground turkey and cook while breaking it apart with a wooden spoon until fully cooked through.
  6. Stir in minced garlic, chili powder, remaining cumin, oregano, paprika, salt, and pepper; cook for about one minute. Mix in crushed tomatoes until combined.
  7. Preheat your broiler setting. Spoon the turkey mixture generously into each stuffed sweet potato skin. Top each with one tablespoon of grated cheese.
  8. Broil for about 30 seconds or until cheese is melted and bubbly. Garnish with minced parsley before serving.
