  • 8 oz sliced mushrooms
  • 2 tsp olive oil
  • 1 2.25 oz can sliced black olives (optional)
  • 1 cup shredded Mozzarella cheese
  • 1 cup shredded Italian Blend cheese
  • 4 eggs, beaten
  • 1/2 cup heavy cream (or milk)
  • 2 oz sliced turkey pepperoni
  • 1 tsp Italian Herb Seasoning
  • 1/2 tsp Italian Herb Seasoning
  • 1/4 tsp garlic powder

Instructions

  1. Preheat your oven to 400F/200C and spray a glass pie dish with non-stick spray.
  2. Heat olive oil in a non-stick frying pan over medium-high heat and sauté sliced mushrooms until browned.
  3. Drain black olives using a colander.
  4. In a mixing bowl, combine cheeses and Italian seasoning, then transfer to the prepared pie dish.
  5. Beat eggs, mix with cream and garlic powder, then pour over the cheese mixture.
  6. Add mushrooms and olives on top, followed by turkey pepperoni slices.
  7. Bake for 30-35 minutes until eggs are set and quiche is golden brown.
  8. Let cool for 3-5 minutes before slicing.
