  • 1/2 tsp xanthan gum
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 oz cream cheese (room temperature)
  • 3/4 cup unsalted butter (melted)
  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1 1/2 tsp pure vanilla extract
  • 2 egg yolks
  • 2 cups semi-sweet chocolate chips

Instructions

  1. In a bowl, whisk together flour, xanthan gum, baking soda, and salt.
  2. In a stand mixer, mix cream cheese and melted butter until smooth. Add sugars and mix for about 2 minutes.
  3. Mix in egg yolks one at a time and then add vanilla extract.
  4. Gradually combine dry ingredients with the wet mixture until just combined.
  5. Fold in chocolate chips.
  6. Refrigerate dough for at least 4 hours or up to 4 days.
  7. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  8. Scoop dough onto the sheets, leaving space between each cookie.
  9. Bake for 11-12 minutes until edges are set; centers may appear slightly undercooked.
  10. Cool on sheets for a few minutes before transferring to a cooling rack.
