  • 1/3 cup cocoa powder
  • 1/4 cup oat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup nut butter (e.g., peanut butter)
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 3/4 teaspoon vanilla extract
  • 1/3 to 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 baking pan with parchment paper.
  2. Steam and mash one medium sweet potato until soft.
  3. In a food processor, blend together sweet potato, cocoa powder, oat flour, baking soda, salt, nut butter, maple syrup, coconut oil, and vanilla extract until smooth.
  4. Fold in chocolate chips and pour batter into the prepared pan. Top with extra chocolate chips if desired.
  5. Bake for about 25 minutes or until a toothpick comes out clean. Let cool before slicing.
