  • ½ cup butter (room temperature)
  • 1 ⅔ cups sugar
  • 2 eggs
  • 1 ½ tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 cups diced & peeled apples (about 2 large apples)
  • Optional: ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time followed by vanilla extract.
  4. Gradually add dry ingredients to the wet mixture until just combined. Gently fold in diced apples and nuts if using.
  5. Pour the batter into the prepared pan and bake for 35-40 minutes until golden brown.
  6. For the caramel sauce, combine brown sugar, half & half, and butter in a saucepan over medium-low heat until smooth.
  7. Drizzle caramel over the hot cake and return to the oven for an additional 10-15 minutes.
  8. Allow cooling for at least fifteen minutes before serving.
