  • 1 cup heavy whipping cream (divided)
  • 1 cup unsweetened almond milk
  • 4 large egg yolks
  • 1/2 tsp vanilla extract
  • 1/2 tsp xanthan gum
  • 1/4 tsp salt
  • 1/4 cup butter, melted
  • 1 tbsp water
  • 1 cup heavy whipping cream, chilled
  • 3 tbsp powdered Swerve Sweetener
  • 1 tbsp cocoa powder
  • 1/2 ounce sugar free dark chocolate

Instructions

  1. Preheat the oven to 350°F (175°C). Combine almond flour, cocoa powder, 1/4 cup powdered Swerve sweetener, and salt in a mixing bowl. Add melted butter and water; mix until crumbly. Press into a greased 9×13 baking dish and bake for 10 minutes. Let cool.
  2. Beat softened cream cheese with the remaining powdered Swerve sweetener and vanilla until smooth. Whip half of the heavy cream to stiff peaks and fold into the cream cheese mixture. Spread over the cooled crust.
  3. Combine almond milk, remaining Swerve sweetener, egg yolks, xanthan gum, and cocoa powder in a saucepan over medium heat. Stir until thickened (about 5–7 minutes). Remove from heat and stir in butter pieces until melted. Pour over the cheesecake layer.
  4. Whip the remaining heavy cream with powdered Swerve sweetener until soft peaks form; spread over the pudding layer and dust with cocoa powder.
  5. Chill for at least 4 hours or overnight before serving.
