  • 1 medium spaghetti squash
  • 4 tsp olive oil
  • 2 cloves garlic
  • 1/2 lb ground beef
  • 1/2 cup marinara sauce
  • 2/3 cup ricotta cheese
  • 1/3 cup grated parmesan cheese
  • 2/3 cup mozzarella cheese (shredded)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Drizzle with 2 tsp olive oil and sprinkle with sea salt.
  3. Place cut side down on a baking sheet and roast for 30-35 minutes until tender.
  4. In a skillet, heat remaining olive oil over medium heat and sauté minced garlic until fragrant. Add ground beef, seasonings, and cook until browned.
  5. Stir in marinara sauce and remove from heat.
  6. In a bowl, mix ricotta, parmesan, and half of the mozzarella.
  7. Scrape some flesh from each squash half to create filling space. Fill with beef mixture and dollop cheese mixture on top; sprinkle remaining mozzarella.
  8. Bake for an additional 10-15 minutes until cheese is bubbly.
