  • 400g pasta (short shapes like fusilli or bowtie)
  • 2 roasted corn cobs
  • 3 green onions
  • 1 shallot
  • 2 jalapeños
  • 1/2 cup cilantro
  • 1 cup cotija cheese
  • 1 cup sour cream
  • 1/2 cup mayo
  • 3 cloves garlic
  • juice and zest of 1 lime
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt & pepper

Instructions

  1. Roast the corn in a frying pan over medium heat for 10-15 minutes until golden brown; remove kernels from cob.
  2. Cook the pasta in salted boiling water until al dente; drain and toss with olive oil.
  3. Prepare other ingredients by slicing green onions and mincing shallot, garlic, jalapeño, and cilantro.
  4. In a mixing bowl, combine sour cream, mayo, minced garlic, lime zest & juice, smoked paprika, chili powder, salt & pepper; whisk until smooth.
  5. In a large bowl, mix cooked pasta with roasted corn and all prepared ingredients; pour dressing over and toss well.
