  • 1/2 tsp salt
  • 1 cup (200 g) granulated white sugar
  • 1 cup (227 g) unsalted butter, very softened
  • 1 egg, at room temperature
  • 2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar, for rolling dough in

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, granulated sugar, and vanilla until smooth. Refrigerate.
  2. Create the strawberry mixture by combining diced strawberries with sugar; let sit to enhance flavors.
  3. Preheat the oven to 350°F (175°C). Whisk together flour, baking powder, baking soda, and salt in one bowl.
  4. In another bowl, cream softened butter with sugar until fluffy; add egg and vanilla.
  5. Gradually mix dry ingredients into wet ingredients until combined.
  6. Assemble cookies by flattening dough, adding cheesecake filling and strawberry mixture, then rolling into balls.
