  • 0.3 ounces sugar-free strawberry jello (1 package)
  • 4 egg whites
  • ⅓ cup canola oil
  • 1 cup frozen unsweetened strawberries (thawed)
  • ½ cup water
  • ⅓ cup butter (softened)
  • 2 ⅓ cups powdered sugar

Instructions

  1. Preheat your oven to 350°F and grease two 9-inch round cake pans.
  2. In a large mixing bowl, combine the white cake mix and strawberry jello until well mixed.
  3. Add egg whites and canola oil; beat until blended.
  4. In another bowl, mash the thawed strawberries (reserving 3 tablespoons). Stir mashed strawberries and water into the batter.
  5. Pour batter evenly into prepared pans and bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  7. For frosting, combine softened butter with reserved strawberries and gradually mix in powdered sugar until fluffy.
  8. Frost cooled cakes as desired.
