  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt (divided)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese (softened)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic (minced)
  • ½ teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 375°F.
  2. Drizzle chicken breasts with olive oil; season with paprika, salt, garlic powder, and onion powder.
  3. Cut pockets into each chicken breast carefully.
  4. In a bowl, mix cream cheese, Parmesan, mayonnaise, spinach, minced garlic, red pepper flakes, and remaining salt.
  5. Stuff each chicken breast pocket with the spinach mixture.
  6. Place in a greased baking dish and bake uncovered for 25-30 minutes until cooked through.
