  • 1 lb spicy Italian sausage (casings removed)
  • 1 tbsp olive oil
  • 1 small yellow onion (finely diced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 cup water
  • 1 can (15 oz) red kidney beans (drained and rinsed)
  • 1 can (15 oz) cannellini beans (drained and rinsed)
  • 1 cup ditalini pasta
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes (optional, for extra heat)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, celery, and sauté until softened.
  2. Push the vegetables aside and add the spicy sausage. Cook until browned.
  3. Stir in crushed tomatoes, chicken broth, and water until well combined.
  4. Add drained beans and ditalini pasta along with seasonings.
  5. Bring to a gentle boil, then reduce heat and simmer uncovered for about 20 minutes or until pasta is al dente.
