  • 2 pounds potatoes (cut into 1 1/22 inch chunks)
  • 2 tablespoons olive oil
  • 2 pounds skinless, boneless chicken breasts
  • 1 cup creamy Parmesan garlic sauce
  • 1/2 cup water or chicken stock
  • Optional: shredded mozzarella cheese, grated Parmesan cheese, chopped fresh parsley

Instructions

  1. In a slow cooker, combine the potatoes with olive oil, salt, black pepper, and paprika; stir to coat.
  2. Layer the chicken on top of the potatoes and sprinkle with remaining salt and pepper.
  3. In a mixing bowl, whisk together the creamy Parmesan garlic sauce and water until well combined.
  4. Pour the sauce over the chicken and potatoes in the slow cooker.
  5. Cook on High for 4 hours or Low for 6 hours until chicken is cooked through and potatoes are tender.
  6. During the last 20 minutes of cooking, add mozzarella cheese (and optional Parmesan) until melted.
