  • 1 onion
  • 1 cup chopped carrots
  • 1 cup sliced celery
  • 3 cloves garlic
  • 1 can diced tomatoes
  • 3 cups water
  • 2 beef bouillon cubes
  • 1 can kidney beans
  • 1 can northern beans
  • 1 tsp oregano
  • 1 tsp basil
  • 1 tsp thyme
  • 1/2 cup apple juice
  • 8 oz ditalini pasta
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet and drain excess fat before adding it to your slow cooker.
  2. Combine all ingredients except for the pasta in the slow cooker.
  3. Cook on low for 6–8 hours.
  4. About 15 minutes before serving, cook ditalini pasta until al dente in a separate pot.
  5. Add cooked pasta to the soup and stir well; allow to heat through for another 15 minutes.
  6. Serve hot and enjoy!
