  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 3 tablespoons vegetable or canola oil
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 810 small flour tortillas

Instructions

  1. Preheat oven to 425°F (220°C) and lightly grease a large sheet pan.
  2. Slice chicken and vegetables into strips; place vegetables on the pan and layer chicken on top.
  3. In a mixing bowl, combine all seasoning ingredients. Sprinkle generously over chicken and veggies. Add minced garlic and drizzle oil over the pan; toss to coat evenly.
  4. Roast in the oven for 15-20 minutes until chicken reaches an internal temperature of 165°F (74°C). In the last five minutes, wrap tortillas in foil and warm in the oven.
  5. Remove from the oven; squeeze fresh lime juice over the dish and sprinkle with cilantro before serving in warm tortillas.
