  • 1 can (13.5 fl oz) Coconut Milk
  • Juice of 1 Lime
  • 5 pieces Chicken Thighs, fat trimmed
  • Chopped Spring Onions
  • Coriander
  • Lime Wedges
  • 2 tsp Chilli Oil
  • 1.5 cups Jasmine Rice

  2. Stir in Thai red curry paste and cook for one minute to release its flavors.
  3. Mix in chicken bone broth concentrate and boiling water until dissolved, then add coconut milk.
  4. Add chicken thighs, ensuring they are submerged, and simmer for 15 minutes until cooked through.
  5. Remove the chicken, stir in jasmine rice, cover, and let simmer according to package instructions (about 15 minutes).
