  • 3 cloves of garlic
  • 2 sprigs fresh rosemary

  • ½ cup heavy cream
  • ½ teaspoon kosher salt (plus 1 tablespoon for cooking)
  • ¼ teaspoon black pepper

Instructions

  1. In a large pot, cover the diced Yukon gold potatoes with cold water and add 1 tablespoon of kosher salt. Bring to a boil and simmer for 15-20 minutes until fork-tender.
  2. While the potatoes cook, heat the heavy cream and unsalted butter in a small saucepan over medium heat until melted. Add the garlic cloves and rosemary sprigs; steep for 10 minutes for flavor infusion.
  3. Drain the cooked potatoes using a colander and return them to the pot. Mash until smooth using a potato masher or ricer.
  4. Gradually mix in the warm cream mixture until well combined. Season with salt and black pepper to taste.
