  • 20 oz. (about 4 cups) white + golden corn
  • 1/2 cup finely diced red onion
  • 1/2 jalapeno
  • 1/2 cup chopped cilantro
  • 3 Tbsp. lime juice
  • 1 Tbsp. lemon juice
  • 1 tsp. sea salt
  • Tortilla chips

Instructions

  1. Preheat your broiler to high heat (500°F).
  2. Roast the poblano peppers on a baking sheet lined with foil for about 10 minutes, flipping halfway through until charred.
  3. Steam the roasted peppers in a bowl covered with a plate for about 10 minutes before dicing.
  4. Cook the corn according to package instructions or roast it for added flavor.
  5. In a mixing bowl, combine the cooked corn, diced poblano peppers, red onion, minced jalapeno, chopped cilantro, lime juice, lemon juice, and sea salt.
