1 cup crushed tomatoes
1 tablespoon extra virgin olive oil
1/4 teaspoon apple cider vinegar
1 teaspoon minced garlic
1 tablespoon fresh basil (plus more for garnish)
1 medium sweet onion
1–2 large zucchini
1 large Japanese eggplant
3 large tomatoes
Instructions
Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
In a mixing bowl, combine crushed tomatoes, olive oil, apple cider vinegar, minced garlic, basil, herbs de Provence, salt, black pepper, and chili powder.
Pour the mixture into the greased baking dish. Layer sliced onions, zucchini, eggplant, and tomatoes alternately in the dish.
Optionally spray or brush olive oil on exposed veggie tops for enhanced browning.
Bake for about one hour until bubbling and veggies are tender.
Garnish with additional basil before serving hot or cold.
