  • 4 ounces cream cheese
  • 1¾ cup almond flour
  • ¼ cup coconut flour
  • ⅓ cup sugar substitute (1:1 ratio)
  • ½ cup raspberry preserves (sugar-free)
  • 2 eggs
  • 2½ cups unsweetened flaked coconut

Instructions

  1. Preheat oven to 375°F. Line an 8 x 8 inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, butter, cream cheese, and sugar substitute until crumbly. Add one egg and mix until smooth.
  3. Press the mixture into the prepared pan and bake for 15 to 20 minutes until golden brown.
  4. For the filling, whisk together two eggs, sugar substitute, almond extract, and flaked coconut.
  5. Once the crust is baked, spread raspberry preserves evenly over it. Pour the coconut mixture on top and spread evenly.
  6. Bake for an additional 20 to 25 minutes until the top is golden brown. Let cool completely before slicing into squares.
