  • 1 1/2 cups cooked lentils (brown, green, or black)
  • 1/3 cup nutritional yeast
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 400ºF and line a baking sheet with parchment paper if desired.
  2. In a large mixing bowl, combine the cooked lentils, Spanish quinoa, nutritional yeast, chili powder, cumin, coriander, smoked paprika, salt, and pepper. Mix thoroughly until well combined.
  3. Spread the mixture evenly onto the prepared baking sheet in a thin layer.
  4. Bake for 35-40 minutes, stirring every 15 minutes to ensure even cooking.
