  • 1 lb Ground Beef
  • 1 lb Sausage
  • ½ Onion (diced)
  • 3 Tbs Chili Powder
  • 1 Tbs unsweetened cocoa powder
  • 1 Tbs Smoked Paprika
  • 2 Tbs Cumin
  • ½ Tsp dried oregano
  • 1 Tsp salt
  • 1 Tsp pepper
  • 2 Tsp garlic powder (or fresh garlic)
  • 2 cups beef bone broth
  • 15 oz can of fire roasted tomatoes
  • 1 Can of Rotel
  • ¼ Tsp Xanthan (optional for thickening)

Instructions

  1. Dice the onion finely.
  2. Set Instant Pot to sauté mode and heat olive oil. Add onions and sauté until translucent.
  3. Add ground beef and sausage; cook until browned.
  4. Stir in chili powder, cocoa powder, smoked paprika, cumin, oregano, salt, pepper, and garlic powder.
  5. Pour in beef broth and tomatoes; mix well.
  6. For thicker chili, add xanthan gum and stir.
  7. Cook on manual high pressure for 10 minutes; then perform a quick release.
  8. Serve warm with your choice of toppings.
