  • 2 large eggs, lightly beaten
  • 1/3 cup sliced scallions

Instructions

  1. Drain the shredded zucchini in a colander with a sprinkle of salt for 10 minutes, then squeeze out excess liquid.
  2. In a large bowl, combine the drained zucchini with carrots, garlic, flour, eggs, scallions, salt (1/4 teaspoon), and pepper (1/8 teaspoon) until well mixed.
  3. Heat olive oil in a sauté pan over medium-high heat until shimmering.
  4. Scoop out mounds (about 3 tablespoons each) of the mixture into the pan, flatten slightly, and ensure they are spaced apart. Cook for about 2-3 minutes until golden brown.
  5. Flip each fritter gently and cook for an additional 1-2 minutes until both sides are crisp.
  6. Transfer to paper towels to absorb excess oil and season with salt before serving warm with yogurt or sour cream.
