  • 1/4 cup oat flour
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1 large egg
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • ½ tablespoon water
  • ¼ teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini donut pan.
  2. In one bowl, mix all-purpose flour, oat flour, pumpkin pie spice, ground cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the egg, light brown sugar, oil, vanilla extract, and canned pumpkin.
  4. Combine wet and dry ingredients until just mixed into a thick batter.
  5. Pipe the batter into the mini donut pan until half full.
  6. Bake for 6-7 minutes until donuts spring back when touched.
  7. Cool on a wire rack before glazing with a mixture of powdered sugar, maple syrup, corn syrup, water, and cinnamon.
