  • 3/4 cup mashed overripe banana
  • 1/2 cup yogurt
  • 1/2 cup pure maple syrup
  • 2 tsp pure vanilla extract
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 loaf pan and line the bottom with parchment paper.
  2. In a mixing bowl, whisk together the flour, protein powder, baking soda, baking powder, salt, and cinnamon.
  3. In another bowl, mash the overripe bananas until smooth. Stir in yogurt, maple syrup, oil (or water), and vanilla extract until fully blended.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; fold in any optional mix-ins if desired.
  5. Transfer batter to the prepared loaf pan and smooth out the top. Bake for about 40 minutes or until a toothpick inserted comes out mostly clean.
  6. Let cool in the pan for 10 minutes before transferring to a plate. Allow to cool completely before slicing.
