Instructions

  1. If using fresh peaches, peel and chop them. For frozen peaches, thaw slightly.
  2. In a blender or food processor, combine chopped peaches, Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice. Blend until smooth.
  3. Taste the mixture and adjust sweetness as desired by adding more honey or maple syrup.
  4. Pour the mixture into an ice cream maker and churn according to manufacturer instructions (20–25 minutes). Or pour into a shallow freezer-safe container and freeze for 1–2 hours, stirring every 30–60 minutes until soft-serve consistency is achieved.
  5. Serve immediately for a soft texture or freeze for an additional 2–3 hours for firmer scoops.
