Ingredients

  • 4 to 4 1/2 lbs peaches (about 1418 medium)
  • ½ cup water
  • 4 cups granulated sugar

Instructions

  1. Rinse peaches under cool water and blanch in boiling water for 30-60 seconds before transferring them to cold water. Drain and peel.
  2. Cut the peeled peaches in half, remove pits, and discard skins.
  3. Dice the peaches into smaller pieces and place in a large saucepan with ½ cup water. Simmer over medium heat until soft.
  4. Blend the mixture into a smooth pulp using a food processor or immersion blender.
  5. In the same saucepan, combine 2 quarts of peach pulp with 4 cups of sugar and bring to a soft boil while stirring until dissolved.
  6. Reduce heat and maintain a low boil, stirring often until thickened enough to mound on a spoon.
  7. Jar the mixture in sterilized containers, leaving ¼” headspace if canning. Process in a water bath for 10 minutes (15 minutes above 6,000 feet).
  8. Store in a cool place for up to 18 months if canned; refrigerate after cooling and consume within 3 weeks or freeze for up to 6 months.
