  • 14 grams kosher salt
  • 2 grams active dry yeast
  • 40 grams extra virgin olive oil
  • 3 tablespoons warm water
  • 1 teaspoon iodized salt
  • 1 tablespoon water
  • 2 tablespoons extra virgin olive oil
  • 12 rosemary sprigs (chopped)
  • 2 garlic cloves (finely minced)
  • 1 teaspoon kosher salt
  • 1 teaspoon oregano
  • Pinch red pepper flakes

Instructions

  1. Combine honey and yeast in warm water; let sit for 5 minutes.
  2. In a mixing bowl, whisk together flour and salt. Add the water mixture and olive oil; stir until combined.
  3. Cover with plastic wrap and let rest for 5 minutes. Stretch and fold the dough several times; cover again and rest for another 15 minutes.
  4. Repeat stretching and folding, then refrigerate for 12-18 hours.
  5. The next day, pour olive oil into a greased baking pan; place dough in the pan and let rise in a warm area for 2-4 hours.
  6. Dimple the dough, add brine, then let proof for an additional 45 minutes before baking at 425°F (220°C) for about 30 minutes.
