  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • ½ cup grated Parmesan cheese
  • Juice from ½ lemon
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp dried thyme
  • 1 tsp salt (divided)
  • 1 tsp black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder

Instructions

  1. Season the salmon fillets with garlic powder, paprika, salt, and pepper.
  2. In a nonstick skillet, heat olive oil and butter over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown; remove and set aside.
  3. In the same skillet, sauté minced garlic and chopped onion until fragrant. Stir in dried thyme and add orzo for toasting.
  4. Pour in chicken broth; bring to a boil then simmer until orzo is nearly al dente.
  5. Add spinach until wilted, then mix in lemon juice and Parmesan.
  6. Return the salmon to the skillet; simmer briefly before serving warm.
