  • 1 cup shredded coconut (or leftover coconut meal)
  • 5 dates
  • pinch sea salt
  • 1 Tbsp coconut oil (only if needed when the base is not sticky)
  • 1.5 cups full fat coconut cream (homemade or canned)
  • 1 cup blueberries
  • 1/4 cup maple syrup
  • 1 Tbsp Earl Grey tea
  • 1 Tbsp corn starch
  • 2 tsp agar-agar
  • 1 tsp vanilla extract
  • 1/3 cup blueberries (or to taste)
  • 1/3 cup dragon fruit balls (or to taste)
  • 1 Tbsp shredded coconut (or to taste)
  • edible flowers (optional)
  • any favorite fruit or toppings

Instructions

  1. Prepare the crust by blending almonds, shredded coconut, dates, sea salt, and coconut oil (if needed) in a food processor until sticky. Press into a tart tin and chill for 15 minutes.
  2. For the filling, warm coconut cream in a saucepan, then mix in blueberries, maple syrup, Earl Grey tea, corn starch, agar-agar, and vanilla extract. Cook until thickened.
  3. Strain the filling through a sieve to remove fruit bits before pouring over the chilled crust.
  4. Refrigerate overnight to set before serving.
  5. Decorate with extra blueberries, dragon fruit balls, shredded coconut, or edible flowers as desired.
