  • 3 teaspoons baking powder
  • 1/2 teaspoon fine salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup vegetable oil
  • 2 tablespoons Greek yogurt (or sour cream)
  • 2 tablespoons cocoa powder
  • Strawberry essence
  • Pink food dye
  • Fluffy vanilla buttercream frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cocoa powder, salt, and strawberry essence.
  3. In another bowl, cream softened butter and sugar until light and fluffy. Mix in eggs one at a time.
  4. Add milk, vegetable oil, Greek yogurt (or sour cream), and vanilla extract to the creamed mixture until smooth.
  5. Gradually combine dry ingredients with wet ingredients without over-mixing.
  6. Divide batter into three bowls: leave one plain for vanilla, mix cocoa into another for chocolate flavor, and add strawberry essence with food dye to the third for strawberry flavor.
  7. Layer each flavor in cupcake liners: vanilla on bottom, chocolate in the middle, strawberry on top.
  8. Bake for 18–20 minutes; cool completely before frosting with vanilla buttercream.
