  • 160 g all-purpose flour
  • 60 g powdered sugar
  • 115 g unsalted butter, cold and cubed
  • 1 egg yolk
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 tsp cornstarch

Instructions

  1. In a mixing bowl, combine flour and powdered sugar. Cut in the cold butter until crumbly. Add egg yolk and mix until combined; add cold water if needed.
  2. Shape dough into a disk, wrap in plastic, and chill for 15 minutes.
  3. In another bowl, mix diced apple, berries, sugar, lemon juice, cinnamon, and cornstarch.
  4. Preheat oven to 180°C (350°F).
  5. Roll out the chilled dough to about 1/4 inch thick; cut into circles for pie dishes.
  6. Place dough in dishes; fill with the fruit mixture.
  7. Bake for 25–30 minutes until golden brown. Let cool slightly before serving.
