  • 1/4 cup brown sugar
  • 1 can sliced pineapples (drained)
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a saucepan over low heat, melt the butter and stir in the brown sugar until smooth. Pour this mixture into each muffin cup.
  3. Add one slice of pineapple and a maraschino cherry on top of the sugar mixture in each muffin cup.
  4. In a mixing bowl, cream together the granulated sugar and egg until fluffy. Add milk and vanilla extract; mix well.
  5. In another bowl, combine flour, baking powder, and salt. Gradually add to the wet ingredients until just combined.
  6. Spoon the batter over the pineapple layer in each muffin cup until filled three-quarters full.
  7. Bake for about 20 minutes or until a toothpick inserted comes out clean. Let cool slightly before serving.
