  • 1 small onion, grated
  • 3 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Soak wooden skewers in water for 30 minutes to prevent burning.
  2. In a large mixing bowl, combine ground meat with grated onion, minced garlic, parsley, cilantro, and all spices. Mix until well combined.
  3. Divide the mixture into 6–8 portions and shape each onto a skewer into long oval kebabs.
  4. Preheat your grill or grill pan over medium-high heat and lightly oil the surface.
  5. Cook kebabs for 10–12 minutes, turning occasionally until browned and cooked through.
  6. Serve hot with rice or flatbread alongside tahini or yogurt sauce.
