  • 1/2 lb radiatori pasta
  • 6 ears grilled corn
  • 3/4 cup mayonnaise
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 2 tablespoons minced garlic
  • 2 teaspoons chili powder
  • 1/3 cup diced red onion
  • 1/4 cup crumbled cotija cheese

Instructions

  1. Cook radiatori pasta in salted boiling water until al dente (approximately 8-10 minutes). Drain and rinse with cold water.
  2. Grill corn over medium heat until charred (about 10 minutes), then cut kernels off and add to the pasta bowl.
  3. In the same bowl, combine pasta, corn, mayonnaise, feta, cilantro, lime juice, garlic, chili powder, red onion, salt, and pepper. Mix well.
  4. Chill for at least 30 minutes before serving to meld flavors.
