  • ⅓ cup olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons red apple vinegar
  • 2 teaspoons dijon mustard
  • 2 cloves garlic, minced
  • ½ teaspoon oregano
  • ½ teaspoon sea salt
  • freshly ground black pepper
  • 19oz can cannellini beans, drained and rinsed
  • 19oz can kidney beans, drained and rinsed
  • 15oz can chickpeas, drained and rinsed
  • ½ English cucumber, quartered and sliced
  • 1 pint cherry tomatoes, sliced
  • 1 bell pepper, diced (red, orange or yellow)
  • ½ cup kalamata olives, sliced
  • ½ cup chopped fresh parsley
  • ½ cup small-dice red onion
  • 2 tablespoons roughly chopped fresh basil
  • ¾ cup crumbled feta cheese

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, red apple vinegar, dijon mustard, minced garlic, oregano, sea salt, and black pepper until well combined.
  2. In a large bowl, combine cannellini beans, kidney beans, chickpeas, cucumber slices, cherry tomatoes, diced bell pepper, sliced olives, chopped parsley, diced red onion, and basil.
  3. Pour the dressing over the bean mixture and toss gently until everything is evenly coated.
  4. Fold in crumbled feta cheese carefully to maintain its texture.
  5. Cover and chill in the refrigerator for at least 2 hours before serving.
