  • 2 eggs
  • 2 tablespoons culinary matcha powder (sifted)
  • 1 tablespoon vanilla extract
  • 1 ⅓ cups milk
  • 2 ⅓ cups mochiko
  • 1 ¼ teaspoons fine sea salt
  • 6 ounces white chocolate chips
  • ¼ cup heavy cream
  • 1 tablespoon culinary matcha powder

  1. Preheat oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. In a bowl, whisk together melted butter and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in matcha powder, vanilla, and milk.
  3. In another bowl, mix mochiko and sea salt. Gradually combine with wet ingredients using a spatula until just combined.
  4. Pour the batter into the prepared pan, spreading evenly. Bake for about 50 minutes or until a toothpick comes out clean.
  5. For the ganache, heat heavy cream until simmering, then remove from heat and stir in white chocolate chips until smooth. Mix in matcha powder.
