  • 34 medium sweet potatoes
  • 1 can chickpeas
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp paprika
  • ½ cup hummus
  • ½ small red onion
  • ⅓ cup chopped parsley
  • ⅓ cup vegan feta cheese (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and cut sweet potatoes lengthwise; score each half.
  3. Toss sweet potatoes with olive oil and salt; place skin-side up on a baking sheet.
  4. Roast for 25-30 minutes until caramelized.
  5. In a mixing bowl, toss chickpeas with olive oil, paprika, and salt; spread on another baking sheet.
  6. Roast chickpeas for 20-25 minutes until crispy.
