  • 2 cups diced carrots
  • 1 cup finely chopped onion
  • ½ cup finely chopped celery
  • 1 tablespoon minced garlic
  • 1 ½ pounds boneless, skinless chicken breasts
  • 6 cups low sodium chicken broth
  • 1 cup dry orzo pasta
  • ½ cup fresh squeezed lemon juice

Instructions

  1. Heat olive oil in an Instant Pot or large pot over medium heat. Sauté carrots, onion, and celery for about 5 minutes until softened. Stir in garlic, black pepper, parsley, thyme, salt, and bay leaves; cook for another minute.
  2. Add chicken breasts and pour in chicken broth to cover completely. For Instant Pot: seal lid and cook on high pressure for 15 minutes; for stovetop: bring to a boil then reduce heat to low and simmer for about 25–30 minutes.
  3. While chicken cooks, boil water in a separate pot and cook orzo pasta according to package instructions; drain and set aside.
  4. Once cooked, remove chicken from broth and shred it. Return shredded chicken along with cooked orzo to the pot.
  5. Stir in lemon juice before serving hot; adjust seasoning if needed.
