  • 1 tablespoon (11g) psyllium husk powder (optional)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 ½ cups (360g) warm water (110°F)
  • 2 large eggs (room temperature)
  • ¼ cup (85g) honey
  • ¼ cup (55g) vegetable oil

Instructions

  1. Preheat your oven to 350°F.
  2. In a stand mixer, combine gluten-free flour, yeast, psyllium husk powder (if using), baking powder, and salt on low speed until mixed.
  3. Add warm water, eggs, honey, and vegetable oil. Mix on low for about one minute until combined.
  4. Increase speed to medium and beat the dough for five minutes until stiff but sticky.
  5. Grease a 9×4 baking pan, pour in the dough, smooth the top with a spatula, cover with greased plastic wrap, and let rise in a warm place for about 30 minutes until it reaches two-thirds full.
  6. Bake for 40-50 minutes until golden brown and the internal temperature reads around 205°F.
  7. Allow cooling in the pan for five minutes before transferring to a wire rack. Let cool completely for at least two hours before slicing.
