Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut zucchini into matchsticks, leaving some peel for texture.
  3. In a mixing bowl, combine eggs and heavy cream until blended.
  4. Crush beef rinds in a food processor until breadcrumb-like; mix in grated Parmesan.
  5. Coat each zucchini stick in the egg mixture, then dredge in the beef rind mixture.
  6. Place coated zucchini fries on a baking rack over a baking sheet.
  7. Bake for 15–20 minutes or until crispy at the edges.
